We tried a Fou D’or Sour – Ale by Hermit Thrush Brewery at Whetstone Station Restaurant and Brewery in Brattleboro, VT.
This is our unblended foudre aged golden ale, the culmination of many batches held in a single oak tank for months. Old a French oak allows our wild yeast to breathe slowly, creating a delicate balance of tart and funk, and the relaxed pace of our fermentation allows added complexity to develop further. Time tastes quite nice, and this beer takes time..
